Sonic Racing Transformed and Bloody Rally Show both do 4-way split-screen and work fine with three. This list is only games I own/have used splitscreen co-op and enjoyed. Forced, Monaco, and Magicka are all same-screen local games that work fine with three. It's a standard twin stick shooter with some interesting mechanics on character classes.
